Butter Icing
Butter icing can be spread, swirled or piped, and it can also
be flavored or tinted with food coloring if liked.
This recipe will make sufficient butter icing to cover the top and
sides of an 8 inch sponge cake.
Ingredients
4oz butter or soft margarine
8oz confectioners’ sugar (powdered sugar)
A few drops of vanilla extract
1 teaspoon of milk
‘Cooking’ Instructions
To make this delicious butter icing the butter needs to be soft,
so you may have to remove it from the refrigerator several hours
before you begin. However, if you’re using soft margarine
this should be removed about half an hour to an hour before commencing.
Begin by sifting the confectioners’ sugar into a bowl. Then
put the softened butter into a separate bowl and beat until creamy.
Now gradually add the sifted confectioners’ sugar followed
by the vanilla extract and the milk. Then beat together until the
mixture is smooth, light, creamy and fluffy, adding a little more
confectioners’ sugar or milk if needed to achieve the right
consistency.
